小提示

  • 糕点面粉比面包面粉含更多淀粉,更少的麸质,更适合做蛋糕。[2]
  • 不同面粉的增稠特性大有不同。[3] 因此,当使用一袋新的面粉时,最好先做一个小蛋糕。因为这袋面粉不一定会做得出完美的大蛋糕。冬天,做蛋糕需要的面粉要比夏天时做要少。

警告

  • 不要使用粗颗粒状的糖。这样做出来的蛋糕口感会比较粗糙。
  • 烘烤的时候要注意查看。确保温度适当,烘烤得均匀。
  • 搅拌好了之后,就不要再次搅拌。
